I recently added a second pH probe input, "pH" to my X4 system on probe port 2. I calibrated that probe and all seemed to be OK.
I deleted my original pH probe input, "sump_pH" that was on probe port 1.
After deleting the "sump_pH" input, I started to receive the following...
I have a peristaltic pump running constantly at 2ml/min, which is about 3/4 of a gallon per day. I think this is just below my evaporation rate. I am watching it closely to make sure. Level changes so slowly it is pretty forgiving. Having a level sensor is not a bad idea.

Why not just use the "Kalk Reactor" Output type? It has ON and OFF parameters for your pump, pH dependancy, with an optional section for stirrer motor scheduling.

Correction on 3) : The graph becomes shorter because the date and value are added below the graph. This makes sense. On my phone, my finger often gets in the way of the date/value display, so I did not notice that. My bad.
Just updated to the latest firmware and App version 2.6.0. The graph update is definitely a big improvement. I especially like that the SELECT/UNSELECT does not appear when I touch a graph. With that said, I did notice a few issues:

Hard to say, but I would buy it. The video was from Jun 17, 2021, over 1.5 years ago. I have heard it can take two years to bring a product to market. Maybe CV is still working on it.
Other solutions, like motion sensing LED strip lights from IKEA or elsewhere, can use their own 12v/24v driver and plug into the wall instead of using up one of your Hydros ports/outlets. Food for thought.
