Looking to purchase, but trying to figure out how long readings are kept for, 6 months, 1 year ? cant find this info. If I hook up a pH monitor, how often does it log readings, every Hour?

At this time it is 5 days worth. I think it is on their list to expand the graphing. Below is a screenshot.

Items (such as pH or temperature) with actual values are logged every 10 minutes.
Items that are on / off (like Wet / Dry) are logged whenever they change.
The data on the server is retained for at least 6 months.
However the application currently only allows you to view the past 5 days. As Danny says that is on the list to be improved.
